Coffee degrees
Coffee experts classify coffee beans into 5 basic grades, as follows: -
- First class: (specialty coffee) and is evaluated by the experts of the Specialty Coffee Association.
- Second class: Premium (Fine Cup or Fine Commercial) coffee, the most famous examples of which are Colombian Supremo coffee and Brazilian Santos coffee, but it is not considered among the specialty coffees.
- Third class : (Basic Commercial Coffee).
- Fourth class: (mixed or circulating coffee).
- The fifth and final classof coffee: it is out of classification (off grade sorting residue), which is everything that is collected from the remaining coffee beans after sorting the good ones, and they are often of poor quality and cheap in price.
Finally, the primary goal of classifying coffee into grades out of 100 is to classify the quality of the coffee, which is reflected in the quality and taste of a cup of coffee. The attached table shows the quality classification of specialty coffee grades according to the Specialty Coffee Organization (SCA):
